Are solvents (such as acetone, hexane, etc.) used to extract this lecithin? If so what are the residual concentrations in the final product?

Hexane and acetone extraction cannot be used for a main ingredient of an organic product. In other words I could add a small amount of hexane extracted lecithin to my chocolate that was from organic cacao and still call it organic but I could not legally call hexane or acetone extracted lecithin organic. I have been involved with organic foods for 40 years and regulations for over 30.

What country were the sunflowers grown in and in wich country were they prossesed?

China is the only source for commercially available 100% organic sunflower lecithin... so the better question to ask is... are all the ingredients used to make this product “Made in USA”? I would never trust anything labeled "organic" where the raw materials are coming out of China as anything there can technically be called organic...for example... I certainly wouldn't want to be consuming a food product that was grown with human waste biosludge fertilizer which is totally allowed for organic crops in China.

How much phospatidylcholine and phosphatidylserine is in each serving?

They probably don't want to say because the best source of Lecithin comes from soybeans. The sunflower can't reach the high percentages of phosphatidylcholine that soybean gives !
