How do you switch between letting some noise through and having it mostly muted?

The Loop ear plugs block a good bit of sound on their own. Adding the inserts to the inner ring blocks even more sound. There is no other adjustments possible.

does the foam or silicone have more noise reduction?

The foam reduces noise more than the silicone does.

at work, a lot of our machines (coffee grinders/ovens) often distract me from hearing customers... will these help??

These earplugs do a great job of blocking loud noises, but they are not great for hearing the spoken word. My recommendation is to find a set with separate, removable, filters, that specifically state they allow for hearing conversations.

You can. I prefer the quiets to sleep in. They are soft silicone so they don't hurt.
