The handles are really convenient in that they are detachable. I sprayed the bottom of the pan as the dough did stick a bit when using it on the grill. We also found it really fun on to use over the campfire while we were camping! Gives the dough a smoky flavor without burning. Just use indirect heat or if your BBQ has an upper rack, use that. I thought it may be helpful to explain how we used it. First spray/oil the grill pan. We prepared the dough on floured parchment paper, then flipped the dough over onto the oiled grill pan and peeled away the parchment paper. We then heated the grill while putting on the pizza toppings. After the grill reached 500F, we placed the pizza in the grill pan on the main rack of the grill, turned down the burners a little, and monitored it a few times for 10 min. We then moved the grill pan to the top grill rack and put aluminum foil on the middle rack directly underneath it so that the bottom crust did not burn. We grilled it for another 5 min or so. It turned out wonderfully!
