I bake all of our bread and after trying Wessex Mill flour I was impressed by the flavour, texture and rise of my loaves. This flour mixes well with other bread flours, such as wholemeal to create a delicious loaf of bread. Iโve even managed to reduce the amount of yeast needed as the bread rises so well. A great product that works out cheaper than buying small bags.

Buy the flour its great... buy the 1.5 kg bags rather than the sack though....
I KNOW the flour is of excellent quality because I have bought the 1.5 kg bags before but the 16kg sack is badly packed and arrived in a damaged box with punctured sack. Amazon were really good and dealt with the problem very promptly.

Maybe I got a bad batch?
I bought this in desperation, as I had promised 4 sourdough loaves to some people for Tuesday, and my usual supplier would not have delivered on time. I had just enough flour from my previous stock to make the first 3 loaves and the 4th I used this new flour. After 4 lots of stretch and folds over 2 hours, the first 3 loaves had excellent gluten development. The fourth, which had this flour in it, was a complete goopy mess. I can't return it, as the bag is open and I've stored it all. I've got 16kg of flour I cannot use now. I mean it could be used for cakes or something, but I'm only really baking bread constantly. I don't have the space to store flour that I might use one day. I see this flour has excellent reviews, so maybe I just got a bad batch? I will try again, but I'm pretty sure I'll either dump it or give it away.

Don't rush it.
I wasn't happy with this flour at first, then again ive only been making my own bread for a year now. But I changed my bread making habits. It needs more time to mix and rise. Then I knead it for 8+ mins and let it rise, Then knead it lightly again and rise.Really nice flavour and a nice crust.

Very impressed and won't use any other brand now.
Such good flour and great value for money! I bake bread at least once a week and I won't use any other brand now. I'm really impressed with this flour and it tastes amazing.
