I only received one six (6) ounce package. Did anyone else have this problem?

In addition to the 6/6 pack there is also a single 6 oz pack sold as well as 20 oz and 3/20 packs. You probably ordered the wrong one . The 6/6 pack is cheapest, most convenient size.

Do you have to refrigerate or freeze the opened package? How long can it be out of the fridge?

Yes, you should refrigerate the package once it is opened. It should be used within six weeks once the seal is broken. If you do not think you'll use the whole package it that time freezing is a good option. Once opened, the bacon should not be out of the refrigerator for more than an hour or two.

what is the sell by date?

Not sure I can give any helpful answer to this. The product is available from several different sellers on Amazon, so there is a solid chance that there will be several different production runs of the product with different sell by dates with each of them (and maybe even with a single seller). Good inventory practice is to move the oldest date out of the warehouse first so that it doesn't hit the expiration date. If the sell by date is a concern, then that is certainly a great question to ask of the seller. Good luck. :)

How many bits to a piece of bacon

It depends on how big the piece of bacon, the thickness of the slice, and how fine the bit. Assuming a one ounce slice of bacon, there are 500 to 1000 bits as made by Hormel.
