Would this work for shaving about 2 to 3" off it inches off of a cabinet so I can fit my refrigerator under it

Not really. It is best for shaving off less than 1" or finishing off a rough cut. If you need to cut 2-3" you may want to consider a saw, like a reciprocating saw or a jigsaw, or even a circular saw depending on how much room you have.
