I had someone use a sticky pad and a string to pull things out of my drop box. Does this have anything that would help prevent that?

This product has a saw tooth shaped baffle in the box at the bottom end of the chute that would prevent that type of attempt at removing any contents. I would strongly recommend this as a secure drop box.

Does the chute have a hinged door?

Yes it does - the hinge is across the top.

Can you use another mail slot face or do you have to use what is provided?

The mail slot is welded to the mail chute. It would be possible to change it but difficult.

Is this box water proof ? I am looking for a box as a pass thru mailbox to by exterior gate.

Mine is in my stoop at my office so can’t verify. My guess is it is not waterproof. I believe water could seep through the top hinge of the door. Also the door section is separate from the box. They slide into each other to offer in-wall adjustability.
