Sorry....wait... "Steamed"  so how can you claim they're raw if you steam cook them?

The industry uses *Raw* to refer to almonds in their natural state, as opposed to being roasted or salted, for example. During steam pasteurization, to quote the Almond Board, *a short burst of steam treats the surface of the nutmeat only.  This process meets USDA National Organic Program standards, and does not diminish the nutritional value and sensory attributes of almonds.*  Steam pasteurization complies with the FDA requirement that all California almonds (both organic and conventional) sold in the USA must be pasteurized.  Many growers use chemicals to pasteurize such as PPO (propylene oxide) but Wild Soil Almonds does not use any chemicals. To again quote the Almond Boards website: *Nowadays, almond pasteurization is required by law in the U.S, Canada, and Mexico. We see it as our responsibility to provide a safe, pathogen-free, nutritious food product.*

Why is there a picture of a guy in a full protective suit and gas mask in the almond fields, if they are so superior and healthy?

Many farms, organic and conventional, apply highly toxic Class 1 pesticides to their fields and their workers must wear personal protective equipment as seen in the photo.  We do not!   Here’s some additional information:

We choose not to be associated with National Organic Program (NOP) organic certification because it is inconsistent with our primary focus of building soil health and biodiversity.  Fruits, vegetables, nuts, etc. contain naturally occurring life such as probiotics but modern farming practices, organic included, have a different focus and chemicals they use can create sterile soil resulting in foods not rich in life.  
Wild Soil almonds are grown with methods that protect and improve soils, but without any dangerous Class 1 pesticides, because we value our workers and customers as well as our soils. Most organic farmers grow plants using a *disease* model, in which many methods, including some dangerous Class 1 pesticides are used to fight disease. Our trees are grown under a *vibrancy* model in which the diversity of life in our Wild Soil suppresses disease, promotes plant growth, and makes it unnecessary to use Class 1 pesticides.
Please be aware that the National Organic Program (NOP) is a regulatory program housed within the USDA Agricultural Marketing Service which is responsible for developing national standards for organically produced agricultural products.  To quote their website: *Our regulations do not address food safety or nutrition.*   The Organic Materials Review Institute (OMRI) is a separate, non-profit organization that determines which input products are allowed for use in organic production and processing. OMRI Listed products are allowed for use in certified organic operations under the USDA National Organic Program.  The Environmental Protection Agency (EPA) regulates labels that must be used on agricultural chemicals.  Class 1 pesticides, many of which are approved by OMRI for use in organic farming, carry EPA warning labels, such as *DANGER: Fatal if swallowed.  Fatal if absorbed through the skin.  Fatal if inhaled.  Corrosive.  Causes irreversible eye damage.* Certified organic almonds can be grown with many Class 1 pesticides that carry this label.

How do we really know it's not sprayed with PPO?

I think the answer she was looking for was answered in a previous question by the seller, Wild Soil. It said, in part, "...  Many growers use chemicals to pasteurize such as PPO (propylene oxide) but Wild Soil Almonds does not use any chemicals."

Are these good for making almond flour?

The almonds are rather soft but I have been advised to dry them in the oven on the lowest heat setting possible. Then, I think they would make excellent almond flour. I haven't really tried them.  This product is WONDERFUL, however.  The best almonds I have found for the price anywhere.
