Can I go from warming/cooking all day to immediately putting it in the bag safely without anything melting?

I don'y know. I did just use mine and put it in warm without an issue. I don't know about putting it in hot.

Does it work for 8.5 quart crock pot

It works for my 8qt. I don't see why it wouldn't work for a slightly bigger crockpot.

Will this fit my new Ninja 4 in 1 multi cooker?

It ALMOST fits the Ninja cooker. It is a tight squeeze, the zippers don’t quite fully meet in the front. I am keeping it for my Ninja unless I find something made for the Ninja.

My crock pot gets really hot, this won't melt?

I don't think it will melt. I have used it with a hot crock pot of Chili. It works fine for me.
