Q: All of the slices look thick. can it slice super thin? the one i have that just broke went down to 1/32 of an inch. nice for purple onions in a salad.

Mine slices super thin, I sliced ginger really thin and it worked great.

Q: Has anyone used this with spam?

I have not I only used for vegetables. I believe it is sharp enough to do so. It depends on how thick you want the slices.

Q: can you slice cheese? can you slice without the green attachments?

You can slice without the green attachments but I would recommend getting a cut resistant glove or a food safety holder before doing so, I purchased this one https://www.amazon.com/gp/product/B01N6EECR4/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1. As for cheese I am unable to comment on that at this time as I have only sliced fruit and vegetables.
