Could this be used every day or would it strip color?

I only use it once a week and it doesn’t strip my hair. It’s a great product

Is this shampoo authentic?

Not sure what you mean by authentic. I use it weekly to help remove pollutants from my hair that make it look dingy and yellow. (My hair is white). It works. It lathers easily and rinses out easily, too. The only issue i’ve had is the cap broke off its hinge on a previous bottle. I hope the problem is fixed. So far, so good but the new bottle is still more than 3/4 full

Does this shampoo strip hair color at all? I know the manufacturer claims that it's color safe but would like to know users' opinion.

I don't color my hair so I can't say from personal use, but I first became acquainted with Unite products from my hairdresser and most of her clients colored their hair, so I would say yes that it is safe. It is a clarifying shampoo to remove chlorine and build up of hair products. It is drying so I only use it once a week. The Unite line has other shampoos, like voluminizing, moisturizing, etc, that are better for daily use. They are good products.

Will this shampoo affect the coloring on my hair?

No. I have been using over a year and have color often. I LOVE this shampoo as it gives my fine hair body!
