Is the sesame seed flour defatted?

Hello, the Kevala Sesame Flour is defatted, the oil from the seeds has been extracted and then ground into a powdery flour. Removing the oils also extends the shelf life. No chemical or other ingredient is added, it is pure Sesame.

Does it taste good? Comparable to what?

Hello you can substitute Kevala organic sesame seed flour for up to one-quarter of the amount of regular, glutinous flour called for in a recipe. If the recipe calls for non-glutinous flour, the whole amount can be replaced with sesame seed flour. You could do the whole substitution instead of regular glutinous flour anyways but the consistency, although delicious, may not turn out as expected; expect a denser baked good.

Is sesame seed flour absobent like coconut flour & can it be substituted for coconut flour in bread recipes?

Yes it is...it does change the flavor somewhat, but is still delicious.....:-)
