Removing fat and other "icky" things from chicken breasts, salmon, etc is so easy with this extremely SHARP knife. Also love the blade protector that comes with it. Never have to worry about slicing my fingers when I reach into the drawer to get it out.

The 6" and 7" filet knives use the exact same handle and sheath, meaning they pack/store the same. The knife itself is good. It's extremely light, the handle feels great, and the blade is good enough. The blade is flexible, but it is not a spring. Bend it enough and it will stay *slightly* bent, but it can be bent back. It does not come razor sharp. It can be sharpened, but the "titanium" laminate will eventually be impossible to avoid and start gumming up your sharpener

Great size for a beginner at filleting fish.
