Can you change the fuse configuration with this? So could I have 6 5 amp fuses in it or does it NEED to be the ones pictured?

You can use any fuse configuration that you like. It is generally best to have the biggest loads (highest amp fuses) closer to the IN connection.

Ideally, I'd like to use these in a 48v context... Do you have a model that could handle that?

Are the black and red poles extra ones or are they installed in the module?

Both! There are 9 pairs of connectors firmly installed in the DC power distribution unit. There are an additional 9 pairs of connectors that you can use to create your own DC power cables. The 30A connectors are intended to be crimped onto wires with 16awg to 12awg size. You would need a crimp tool (not included) or you could try to solder them instead.
