What kind of plastic is it? Is any of it squishy (pvc/vinyl) ?

No it is not soft squishy, harder plastic. A really cute set with it's carring case.

Is it possible to just purchase the roasting stick? My dog chewed up ours and I can’t find anywhere where it says to contact the seller

I would say not. Our hot dog broke and they would replace it. They wanted the whole set back.
