Is a back enclosure recommended for these installed in ceiling with an open attic and blown insulation? If so, what's recommended?

I built boxes for mine with 5/8” sheetrock so that my ceiling would maintain its fire rating. Made mine the width between trusses (about 22”) by 4’ by 7” deep. Sound great! They are designed for open airspace so the box needs to be big. Would definitely recommend a box for blow-in insulation. Especially if it’s cellulose blow-in. Fiberglass insulation batts shouldn’t be a problem.

We are having trouble installing the speaker cover screens after spray painting-any tricks to help with this?

You don't indicate what kind of problem you have. When painting, remember it is better to apply multiple very, very, very thin coats of paint and let them dry about 20-30 minutes in between coats. Otherwise, you will end up with one thick coat of paint that never dries completely= dry to touch but gummy and scratches easy. If your paint coat is too thick, then lightly sand to reduce the thickness and apply one final light coat of paint after sanding. The cover will go back in - it will be tighter because of the paint but will go back on. It may require to bend the edges inward just a little bit. I recommend to apply 2-3 small dabs about half a penny size of 100% clear silicone on the side the cover touches the speaker frame (apply to the frame not the covers). Don't put too much or it will be messy on your fingers as you guide the covers back on. The silicone will hold the cover in place after it dries. The covers sometimes fall with temperature changes without the help of silicone (it happened to me). Also, the silicone may help you to lube the edge and make easier the install of the cover. Have a rag ready to clean any excess. Good luck.
