If I use this adapter, plug one mono mic to left and another mono mic to right will the sound in my video be stereo?

The source from the mono mic you plugged into the left will be routed to the left channel, and that from the mono mic you plugged into the right will be routed to the right channel. When combined by the proper recorder, it will produce an audio track with left and right channels.

I have 2 speakers. Can I use this to output left song channel to one speaker and right song channel to another speaker?

Yes, I used this to output from TV to receiver and then to stereo speakers.

If i connect two stereo microphones into a recorder, my final result would be a mix of all 4 channels or just 2? say l from mic1 and r from mic2.

Just the 2 channels. Stereo has 3 rings 2 positives and a negative. This separates the positives and splits the negative (1 for each channel). Each female plug has 1 positive and 1 negative. So regardless of what you out into them, each side will be mono and still only come out stereo.
