Do you have to open the individual pouches?

I cut open the pouches and let a few out and it works

do mice smell after they die?

All dead things smell when they die

I need to use these in an office environment, do the packs smell when unopened and when the mice bite into it?

The packs do not smell. If you leave the pack unopened you run the chance that mice will not eat it. I noticed it works best when I open the packs to make it easier for them. If you have little kids that are crawling this poison could make offices a dangerous place. Also, after the mice eat the poison they do not die immediately. They may end up dying outside or some comfortable place inside your office. But this stuff has worked great for me. Also, when the mice bite in to the bait it does not smell.

Are the 1/2' nuggets too large for mice?

Not sure if bags are too large, but I had a mouse problem upon moving into my new home and the mice never touched them at all. Had better luck with ultrasonic devices and covered traps.
