Can you use this smart shunt with the victron mppt 100-20 solar controller?

if i have 4 batteries on 170AH, would this be able to read them ? I'm going to link them in parralel

yes if they wired together in parallel the smartshunt see that as one battery ( 4 X 170Ah) 680Ah

On the smartshunt 500 amp device, is the voltage on the ve.direct interface 5v or 3.3v ?

Shunt takes its power from the battery you are monitoring, I wouldn't think the ve.direct connection would need a separate power source.

I’m trying to install the shunt, however do I need an additional negative cable, to attach the shunt to the battery itself? If so what sort of cable?

Yes you need it. Disconnect all cables from battery negative terminal and connect them to StartShunt terminal labeled TO SYSTEM MINUS. Connect SmartShunt terminal labeled TO BATTERY MINUS directly to your battery negative terminal - using new piece of cable. Connect Vbatt+ terminal on SmartShunt to your battery positive terminal using one of the red cable with the fuse provided with SmartShunt. I hope that will help you.
