Can you use metal utensils on this? Or will they scratch it?

I have used a metal spatula but I am not aggressive with kitchen tools. I have had no issues and am happy to use this griddle.

Whats the thickness of this this product

The raised rim that runs all the way round the plate is 23mm wide. The thickness of the cast iron is around 4mm and the cooking ribs on one side stand 3mm proud. Hope that helps.

Is this suitable for use on an induction hob?

All cast iron is suitable for induction. I use my cast iron skillet regularly. :)

Great hob griddle

Heavy duty, high quality griddle plate. With optional flat surface or traditional grill lines you can equally fry a steak with the classic grill marks or crack out your flippers and have a go at some Tepanyaki. Easy to clean and comes pre-seasoned. Packs some weight so be prepared. Would recommend.
