Will the iPhone 6 plus fit into the smartphone pocket?

I can get my iPhone 6 Plus in the pocket where the passport is in the photos, but it's a tight fit. I think you have to decide whether to use that pocket for your phone or passport, not both.

Can this hold two passports?

Yes, it is fairly roomy. It held my passport, receipts, and money.

Does the rfid blocking material really work? has anyone tested it?

I have watched some videos on you tube regarding the RFID blocker wallets and am pretty impressed. As for this particular wallet I have passed through a door scanner and it went off so I am assuming it works. Sometimes they will also make the scanners go off as you are going through other security areas like airports. :) If worse comes to worse I believe they sell check RFID scanners online for testing. Hope that helps.

Is the key ring strong enough and attached securely enough to attach a strap and use as a wristlet/purse?

I attached a strap (from a fossil wallet) to the key ring to use as a wristlet during my trip to Europe and it worked just fine! But please note-- I didn't exclusively use it as a wristlet, more often than not it was stored in my purse or backpack!
