The yeast extract that is in Yondu is made from the same kinds of yeast that is used for making beer and bread (you might even find yeast extract sold as the sandwich spread known as Vegemite or Marmite). Yeast extract naturally contains glutamates, an amino acid that is found in many foods and is contained in 5-15% of all dietary proteins. MSG is chemically synthesized versions of pure glutamate. As yeast extract is naturally occurring, the amount of glutamate is much less than in MSG. To quote from healthline.com “The main difference between yeast extract and MSG in foods comes down to flavor. MSG doesn’t have a flavor. Instead, it acts as a flavor enhancer, like salt. Yondu is a liquid seasoning that adds a lot of delicious & savory umami flavors to your dishes. In this way, it is quite similar to fish sauce (a fermented anchovy-based sauce used frequently in Southeast Asian cooking). Yondu is also vegan and made from fermented soybeans and vegetables broths. It has a bit more of a delicate flavor and doesn’t overwhelm like fish sauce might. Hi Aurora, both the Korean and the U.S. version of Yondu are produced by Sempio Foods Company. The U.S. version has a slightly more subtle "soy" flavor, making it particularly suitable for use in all types of cuisine (not only Korean dishes).
