Q: where is thermostat located on this unit?

I don’t believe it has a thermostat. There are 2 switches on the back for hot and cold water

Q: How difficult/easy would it be to fill a saucepan, 32oz. Drinking bottle, etc.?

I've done it. Just have to tip the bottom of your drinking bottle or other container out.

Q: Is there a nightlight?

No but the indicator lights in front are always on. Indicating hot, cold and power.

Q: Is there a cup holder/ dispenser?

Great machine but no cup dispenser.
