I am wiring to a vehicle temp gauge. There are no ground wires to/from gauge. Would the ground wires from this unit just be grounded to the vehicle?

I don't really know but, although electrically the negative side of both the input and output could be connected to (auto) chassis ground, I think you would be safer to buy one specifically designed for automotive use.

Correct wiring to get amp/subwoofer stop popping?

Just put a toggle switch with a fuse..just 3 wires on the switch..power,ground and the remote wire that turns on the amp..before you start the engine make sure your toggle switch is off, after starting turn on your switch and your radio will play without popping noise..always turn off your switch before you stop your engine..
