Are you able to make custom size 12”x36” baffle?

Yes ATS Acoustics does make custom sizes on these baffles. They are not sold on Amazon.

For a 1200 sq ft restaurant with 12 ft ceiling. How many do I need?

Good question. A little more info is needed to determine that. You can find ATS Acoustics's online room analyzer that can ask some additional questions and answer this for you.

are these good for small studio spaces with 9 ft ceilings?

Our ATS Acoustic Baffles are 2 ft wide, so hanging from the ceiling they will hang a little over 2 ft without any cables. If that works for you, great. If not, you may want to look at attaching acoustic panels to the ceiling using Rotofast Ceiling Anchors.

are these light enough to hang from a drop(suspended) ceiling?

Yes, if the drop ceiling rails are installed well and in good condition, and you attach the baffle to at least 2 separate drop ceiling rails, I think it will be ok. I would not do a large quantity installation that way, or hang them on a high ceiling (over 10 feet) where falling could be a safety hazard.
