This thing is a monster
I have a decent size kitchen knife collection. Currently 36 knives with most of them being Japanese steel and a few Germans. I have Shun, Enso, Miyabi, Yaxell, Zwilling Henckels, and a lot of Japanese hand forged high carbon steel knives. This is, without a doubt one of the sharpest, if not the sharpest knife I've ever seen right out of the box. This is frighteningly sharp. There is almost zero resistance when cutting veg and it just glides through meat. Honestly, if you're not skilled with knives I would highly recommend *not* getting this knife. This knife will bite you quickly without you even knowing it if you're not 100% focused. You won't even feel it. But if you know what you're doing this knife is an absolute beast

It does not cut it glides through the food.
A truly amazing tool in the kitchen! The finish on the knife is perfect from the edge sharpness, handle finish, balance all perfect. Yaxcell knives are produced in a medium size factory and there are two master sharpeners who finish off each knife that comes out of the factory. A lot of traditional Japanese handmade knife skills go into each knife. I am already researching my next Yaxcell knife purchase because the first one is that good!

Beautiful & Very Sharp!
Beautifully crafted knife. Scarily sharp! The beak is very useful to clean vegetables, for example, slashing leeks open & slicing chicken breast’s into cutlets & cutting garlic into paper thin slices, among other things. I highly recommend it!

Not durable like the price
I thought I miss cleaning the edge but when I actually look closer there they are tiny chips on the edge. I use only for vegetables.
