Will this work on mtb hubs?

It might work but I wouldn't recommend it for that particular use as this is a very light grease specifically for mtb suspension. I use a heavier bearing specific grease from Park Tool. It will last longer.

Does this work on Suntour bikes?

Yes, I use it on my Suntour Zeron and DuroLux forks. Was grease is better, then the Suntour or Rock Shox stuff.

Can this used to lubricate bearings and gears in a mid drive mtb motor? is it safe to lubricate internal plastic gears without degredation peek/nylon?

Yes on the plastic, but I would use regular bike bearing grease instead on this, this is good for rebuilding shocks, forks, dropper posts, its a much lighter grease, great for O-rings.

Would this be good for lubricating and protecting folding knives and leatherman multitools?

It's a light grease that is safe to use on plastic parts, so I see no reason it would not work for your purpose. Just make sure that it penetrates into the joints of the tools so that you get full protection.
