Dear Quentin Johnson, We apologize for our late reply due to Easter Holidays in Greece (19 & 20 of April) and we would like to thank you for making this very good question. The measured phenolic content of high phenolic E.V.O.O.s may vary greatly depending on the method of measurement. Here is a short reference to the 2 most prevalent of them: • H.P.L.C. method (with 2 variations : HPLC -Acidic Hydrolysis & HPLC-COI): This method gives the lowest results and many claim that is outdated due to it's low sensitivity. However is the only recognized method of measurement from the International Olive Council (I.O.C.). Also the Hellenic Food Authority has made the use of H.P.L.C.-COI method obligatory for all Greek olive oil companies, so that they are allowed to use the relative Health Claim (E.U. 432/2012) by European Food Safety Authority (E.F.S.A.). Additionally this method has high availability as there are many international certified labs available for cross examining the results, something that increases significantly the reliability and objectivity of the method. • N.M.R. method: is a relatively new method which usually gives the higher results. It thought to measure a wider range of olive oil phenolic compounds. Many claim this to be a better method and they prefer to use it as usually gives much higher measurements (from 30% up to 500% higher than HPLC) therefore is better for marketing purposes too. However, as far as we know, there is no official recognition from any significant international organizations and it seems that it produces inconsistent results, even on the same olive oil samples. Additionally only one lab worldwide uses this method, so there is no possibility of cross examinations and therefore highly reduces it's relative objectivity & reliability. Much bigger availability and further evolution, will be probably be the key factor for a potential substitution of the HPLC method in the future . Based on the facts above, we are making periodically measurements by using all methods of measurements (including others not mentioned) and use average values in order to ensure the top quality of our product, but we have to use HPLC method as method of reference. Coming back to your original question the relative wide range of polyphenols consist of the measurements of both methods (lower values HPLC-COI, higher values HPLC-Acidic Hydrolysis & N.M.R). Dear customer, Unfortunately, our product is not available in litre bottles BUT there is a great reason for that, irrelative with marketing and price tricks. Olive oil (and in particular its phenolic compounds), is sensitive to light (mainly ultraviolet irradiation), air contact (oxygen) and to high temperatures, because it can be oxidized and lose part of its high-quality and valuable health protective properties. This is actually one of the main reasons, regarding our decision to use exclusively dark coloured (UV-protection), glass containers of small capacity for our product. The use of glass containers with small capacity is crucial, in order to avoid oxidation from the extensive air contact. Larger glass containers, means longer-extended consuming period, and therefore extended required storing period of bottles that have been already opened. Something that causes a more extensive oxidation from air contact with larger quantity of oxygen, for a longer time period. Conclusively, the most important reasons for our relative sophisticated selection, are: best preserving of the quality and organoleptic characteristics, protection of the phenolic content, transportation durability, easier storage & handling, and best suitability as gift idea. nice scent and taste

This is the first time i bought olive oil that is higher priced than regular grocery store olive oils. It was a recommendation of my friend who invests in her olive oil. I made a research on amazon and online and i decided to give this one a try. The way i am going to use it is to sprinkle it on my sandwiches or salads. So far so good. I really like the flavor and taste of it. Very rich and delicious. Tastes different than the ones i used before. And it was shipped to me all the was from Greece. I am trying to eat healthy and hopefully this oil will aid with living a healthy life:) So far I have used it a couple of times and it's nice and fresh. The price is good considering the quality of the product.

For olive oil lovers

If you like a strong olive oil flavor that has that young grassy olive taste and back of the throat peppery kick this is your olive oil. These flavor profiles are typical of the high antioxidant ( phenolic compounds) content that this brand is noted for. I had the green bottle version and I have to say this one, the gold label, is much better, that is , a more pronounced fresh young olive taste and an likely a higher antioxidant level.

Great presentation olive oil. The bottle is easy to pour. The olive itself is very fresh and just the right color. The scent is mild but the right smell. It's a semi transparent yellow. The taste is right too, something you'd get at a italian/greek restaurant on the side. On the pricier side but good quality. I wouldn't buy this again due to the price but I was able to find identical quality at a better deal. Good luck my olive oil loving friends.
