Great Quality for Price Point
The Dexter oyster knife has been a game-changer for me. It’s solid, sharp where it needs to be, and the handle gives me a really secure grip, even when things get slippery. I’ve used other oyster knives before, but this one feels safer and more efficient—the blade has just the right amount of stiffness to pry shells open without bending. I also appreciate the comfort of the handle. After opening a few dozen oysters, my hand doesn’t get sore the way it has with other knives. It’s durable, easy to clean, and clearly built to last. Overall, this is a high-quality tool that makes shucking quicker, safer, and more enjoyable. If you’re serious about oysters, the Dexter knife is absolutely worth having in your kitchen or gear bag.

Very effective and well made
This is the best oyster knife. It is hard to cut yourself (unless you stab yourself head on) and it is very strong and effective at opening oysters by the hinge. The blade is super strong and the handle is very ergonomic and easy to hold.

Well designed oyster knife improves safety and functionality
Well designed, functional and comfortable quality oyster knife. The bend towards the tip of the blade makes popping the oyster shell open much easier than the straight tip ones I have used before. The handle design is comfortable while providing more control and stability, minimizing slipping as you push and twist to open the oyster.

Best Knife If You Prefer An Upturned Tip
I use both this model and the slightly longer (3") and narrower "Boston" style that Dexter also makes. I actually prefer the straight-tip to this "New Haven" style as the former is built like a tank because it appears the blade is just a little thicker and narrower so it is virtually impossible to bend or break. I've opened hundreds of various type of both west-coast and east-coast oysters with the Boston-style and have never had the blade distort, break, or bend. The downside to this is that the blade is a little blunt so sometimes difficult to get through the hinge to pop the oyster. The blade on the New Haven is thinner and more pointed with the upturned tip, so it is possible to bend or break it, although is unlikely except for the toughest and thickest-shelled oyster types. Bottom line: these are cheap enough so I suggest you get one of each and decide which one you prefer and I'd suspect you will like both of them. I have not tried the much-longer 4" "Galveston" also made by Dexter, but I know others swear by this model, especially for large oysters.

My third oyster knife. The last two knives that I have were either small and weak with no sharp blade or big and bulky that sometimes can't get into the oyster hinge. This one is perfect with high quality blade and not too sharp that you can accidentally cut yourself. 10 out of 10

This knife is great for med-large oysters with sizeable gaps in their hinge. The stout blade gives plenty of leverage to pry open the shell and the blade is the best that I have found for neatly cutting the adductor muscle from both the top and bottom of the shell. I have found it less suitable for smaller oysters as the large blade can fracture the top shell at the hinge. It has a comfortable handle which doesn't feel slippery when wet. If you shuck lots of oysters, this should be in your quiver.
