I want to plant these indoors in a classroom. Each child will do it individually. About how many packets do I need?

I think that there are more than enough seeds in the packet for your classroom even w/ 2 or more seeds per student. I planted 6 starter pots and all grew. It does take a while to sprout (envelope says 4 weeks) but they sprouted w/in 3 weeks.

Will these work in hydroponic kits?

This did not grow well in my botinium hydroponic kit.

About how many seeds are in the bag?

Too many and too small to count. I would guess it's about one teaspoonful, if that helps..

Is this Italian parsley seed?

South Mediterranean actually Greek and Italian. The ancient Greeks considered it sacred.
