What is the difference between the different models? Is height the same for all of them?

SMS-20 has steel & plastic components with a max height of 47". The SMS-30 goes to 59". The SMS-40 & -50 use aluminum & plastic and go to 47" and 59" respectively.

how deep is the lip on the desk part and is the aluminum tripod heavy enough to not tip over as compared to the tubular steel?

The lip is about 2" - plenty big for most any music book. And the stand is pretty heavy, definitely heavy enough to be stable.
