Amaranth offers a complete protein profile
Honestly, the flavor isn't my favorite (much prefer quinoa) and the aroma reminds me of corn cobs (I think that may be the "moldy" smell people are describing?) Not mold, just the way some seeds smell - ever smell bird seed? Kinda similar to me. It cooks easily, I keep some in the frig. for adding to breads, cookies, etc., can't even taste it. My husband adds some to his hot cereals to bump up the protein. It's not unpleasant - probably more an individual preference but I still love/ use it for the health benefits. Got a genuine chuckle from a fellow farmer who commented re: fighting pig weed all his life. Ditto!! And here we are - purchasing/ eating a close cousin of that gnarly/ invasive weed! Ironic, eh?!

Great on anything
It iffers a lovely crunchiness to just about anything. I put it on my homemade hummus, on yogurt on my soups. I love it. So yummy

Healthy Amaranth Grains
The Now Brand of Amaranth Grain is as described. I do wish they would make videos to show how to cook with it! I love trying healthy foods, which amaranth grain is; high in protein, low in carbs! As to ways for ways to cook with it, there are multiple ways but like most healthy alternatives to the junk we’ve been fed, it takes time to figure out. So far, I’ve tried popping it and failed, it burns easily and I’ve also tried cooking it on the stove. It has the texture of wet oatmeal but the where oatmeal is soft, Amaranth grains were, well, grainy. Maybe I need to cook it longer? It does have a nutty flavor and it’s pretty strong. Hoping to find a good way to cook or bake with it soon!

Yummy
These are great. I’ve used them in a similar way to how you’d make grits or porridge. Popping was a bit more difficult but it can be done. Would recommend.

Suprisenly good.
It has kind of a weedy taste and a bit of crunch but I like it better than Quinoa which I also like. I grew up fighting pig weed on the farm as a kid, who knew I'd enjoy eating the seeds as an old man? I cook it in my rice cooker and put a little syrup on it.
