What size mat do you recommend? I want to use the mat to roll out pie crust and I am a total newbie.

I have the large size and totally recommend it. It's nice to have the extra room to put dough aside while still being able to roll. Also, a little side note. Make sure the underside of the mat is clean of any residue, i.e. dust from flour or else it won't stick to the table.

Will it move when rolling dough?

It never moves with rolling. Sticks perfectly to the counter and I love that it doesn't move.

I haven't had any problems with the mat rolling up while I'm kneading bread. After I've washed it, it rolls up easily to be stored in the original box.
