How do you open the jar? It has a wax seal on top of a big cork that is flush with the rim.

If you happen to ruin the cork, many gourmet shops or even craft shops carry a wide variety of corks. Just be sure to measure the diameter of the crock as well as a reasonable thickness; hwr, if the exact size isn't available, pick up a few cork stoppers that are a bit on wider in diameter size. Anyone with a steady hand with a sharp knife can shave down the edges enough so it fits. Over the past 30-35yrs I've replaced the corking that fits into 2 separate tall slender glass jars. One jar came with angel hair noodles and the other came with coffee beans inside. Coffee beans are best stored in a de-airing container b/c coffee beans go stale quick. I keep pasta in both the glass jars w/cork lids. They're beautiful on a counter, when set next to either or all of these crocks, esp w/a pourer bottle of olive oil.

there are 8.8 ounces in a jar! very expensive, but very good!!! regular pommery moutarde de meaux in the gray jar is a much better buy. with 17.6 ounces for less money, but no cognac in the recipe!!!!!!!! both are very good!!!!!!!! i normally buy the gray jar!!!
