How many feet I can leave of separation between each pole and still keep the plastic sheet tight?

The further apart you place the poles the more natural sag will occur in the top edge of the sheet of plastic. If you need an absolute tight fit to ceiling I would not go further than five feet apart. Also, once the poles are supporting the plastic, you can easily tape the top edge to hold it tight to ceiling.

Does this include a plastic barrier?

No, plastic sheeting is not included in the ZP4. I would recommend using a 4 mil or 6 mil thickness rather than very thin plastic as the thin plastic moves too in breezes and can rip more easily.

If I purchase 12” poles will they adjust down to 10” walls , just to have the option in heights?

The ZipPoles can only extend to 10 feet. You can purchase the Zipwall aluminum poles that extend to 12 feet and they can be lowered to less than 8 feet.
